What Is Freeze-Dried Fruit? Freeze-drying is a process that removes nearly all moisture from fruit while preserving its natural flavour, colour, nutrients, and structure. Fresh fruit is first frozen, then placed in a vacuum where the ice turns directly into vapour (a process called sublimation). This removes water without damaging the fruit. The result is light, crisp fruit that tastes intensely fruity and can last for months or even years without preservatives.
How Is Freeze-Dried Fruit Different From Dehydrated Fruit? The key difference is temperature and texture. Freeze-dried fruit: •Frozen first, then moisture removed in a vacuum •Maintains original shape and colour •Light and crispy texture •Retains more nutrients •Rehydrates quickly Dehydrated fruit: •Dried using heat •Often becomes chewy or leathery •Can lose more flavour and nutrients •Usually darker in colour Freeze-drying preserves the fruit closer to its natural state.

Does Freeze-Drying Remove Nutrients? Very little. Freeze-drying is considered one of the best food preservation methods for maintaining nutrients. Many vitamins and antioxidants remain intact because the fruit is not exposed to high heat.
Why is freeze-dried fruit so crunchy? During freeze-drying, water leaves the fruit while it remains frozen. This creates tiny air pockets throughout the fruit. Those pockets make the fruit extremely light and crispy.
Why does freeze-dried fruit taste sweeter than fresh fruit? When water is removed, the natural sugars and flavours become more concentrated. This makes the fruit taste sweeter and more intense.
